tasty tomato tart

This is hands down one of my favorite recipes! It is delish and sooo simple. BW asks me to make it minimum once a week. It is perfect for brunch, lunch or a light dinner. And even if you don’t like tomatoes I SWEAR you will love this recipe!

{ tomato tart }

  • 1 refrigerated pie crust
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 tablespoons fresh basil, chopped
  • 4 ripe tomatoes, sliced* (any kind – roma, heirloom, etc.)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
Preheat oven to 375 degrees. Line the bottom of a tart pan with the pie crust. Spread the cheese on the bottom of the pie crust. Sprinkle with basil. Cover evenly with tomato slices. Sprinkle tomatoes with salt and pepper. Drizzle olive oil on top. Bake for 30-40 minutes or until golden brown. Once the tart comes out of the oven let is sit for about 5 minutes before serving.
*if the tomatoes are really juicy, slice them, sprinkle with a little bit of salt and let them sit on a wire rack for 15-20 minutes to draw out some of the liquid.
