brie en croute

I’ve had a similar recipe in my “to try” folder for quite some time, but a recent blog post from a good friend (here, thanks Kendall!) prompted me to try it out. After a practice run on Christmas Eve my family practically begged me to make it again for a post-Christmas family dinner. I made a few changes to the original recipe and they were definitely worth it. Keep reading for a delish appetizer perfect for any family gathering.

{ brie en croute }

  • 1 8 ounce wheel of brie
  • 1 sheet frozen puff pastry, thawed
  • 2 tablespoons butter
  • 1/8 teaspoon cinnamon
  • 1/2 cup sliced almonds
  • 1/4 cup brown sugar

Preheat oven to 425 degrees. Melt butter in a small saucepan. Add almonds and toast for 3-5 minutes. Add cinnamon and stir to coat. Remove from heat. Add brown sugar and stir until well combined. Slice brie in half. Place one half in the middle of the puff pastry and cover with almond mixture. Top with other half of brie. Fold in corners of puff pastry. Brush with egg, bake for about 20 minutes until golden brown. Serve with crackers or apple slices.
